This is my dinner tonight, and the fruits of my labours for about 8-9 hours today. Look at that smoke ring...the effects of 8 hours smoking and a whole bag of mesquite chips. The beverage is my Agincourt Ale, a Belgian style dubbel with a sweet, malty flavour. Not much head, but its a stronger, sweeter style, it isn't really supposed to be highly carbonated. Well, mine isn't, at least.
Now I'm off to actually eat.

That looks good!! Someday perhaps they will come up with scratch and sniff computer monitors; either that or a way to digitize scent which could then be send to the brain via a wireless microchip implanted inside the nasal canal.

Looks like you did a really good job! By that I mean, that looks like it should taste ok.. I mean without tasting it myself, I can't really give a honest review... Not that I have been asked to review it... I'm not saying I wouldn't review if you asked... I'm just saying it looks really good and that I would "review" it to the best of my abilities... Of' course, seconds may be in order.. It's hard to give a good review if you don't have an adequate amount to "review"...

Actually it wasn't the best. I don't think I cooked it long enough (8 hours? not long enough?) because the temps didn't really get up to the 190 range...and so it was kind of chewy/tough. It was cooked completely, definitely, but not slow cooked to the point of tenderness. And this time for some reason the smoke was a bit too much and too harsh. A blend of fruit wood or hickory with the mesquite might be in order, next time.

Still it was quite edible (umm...with enough sauce).
